  • 1 1/2 teaspoons olive oil
  • 2 corn tortillas, cut into small squares
  • 5 eggs
  • salt and ground black pepper to taste
  • 1/4 cup shredded Cheddar cheese
  • 1/2 (14 ounce) can enchilada sauce (such as Old El Paso®)

Preheat a large skillet over medium heat, adding a generous amount of olive oil to it.

Add tortilla squares to the skillet and cook, stirring constantly until they become crispy, taking around 5 minutes.

In a separate bowl, combine eggs, salt, and pepper, whisking them together until well incorporated.

Add Cheddar cheese to the egg mixture and stir until it's fully incorporated.

Pour the egg and cheese mixture into the skillet, cooking and stirring constantly until the eggs are set and firm to the touch, also taking around 5 minutes.

Finally, pour a layer of enchilada sauce on top of the egg mixture.
