Mexican Beef and Noodle Casserole

  • 1 pound ground beef
  • 1 onion, chopped
  • 1 stalk celery, chopped
  • 8 ounces egg noodles
  • 1 (15 ounce) can chili
  • 1 (14.5 ounce) can peeled and diced tomatoes
  • 1 (15 ounce) can whole kernel corn, drained
  • 1/4 cup taco sauce
  • 1 (1 ounce) package taco seasoning mix

Preheat your oven to a high temperature of 250 degrees Fahrenheit (or 120 degrees Celsius, if you prefer metric).

In a large cooking vessel over medium heat, blend the ground beef, onion, and celery together. Sear for 10 minutes, or until the meat is nicely browned and the onion has softened. Remove excess fat from the mixture and set it aside.

In a separate cooking pot, prepare the noodles according to the package's instructions. Once cooked, drain the water and combine it with the meat mixture, chili, tomatoes, corn, taco sauce, and taco seasoning blend. Mix everything together thoroughly.

Pour the entire mixture into a 10x15-inch baking dish and place it in the preheated oven. Allow it to heat through completely, with a nice bubbly surface, for approximately 20 minutes.
