Mexican Beef and Cheese Dip

  • 1 pound ground beef
  • 1 cup diced onion
  • 1 (16 ounce) jar salsa
  • 2 (16 ounce) cans refried beans
  • 2 (4 ounce) cans chopped green chile peppers
  • 1 (2 ounce) can sliced black olives, drained
  • 2 (8 ounce) packages cream cheese, sliced
  • 2 cups shredded Cheddar cheese

Preheat the oven to its highest temperature setting, which in this case is 400 degrees Fahrenheit or 200 degrees Celsius.

In a large and deep skillet, combine ground beef and sliced onions. Heat over high heat, stirring occasionally, until the onions are tender and the ground beef is uniformly browned. Take the skillet off the heat source.

Using a spoon or slotted spoon, carefully remove any excess fat from the beef mixture. Then, add in a can of salsa, a can of refried beans, diced green chile peppers, and pitted black olives. Mix everything together until well combined.

Transfer the beef mixture to a 9x13 inch baking dish. Arrange a layer of cream cheese slices on top of the beef mixture.

Finish the dish by sprinkling shredded Cheddar cheese over the cream cheese layer. Place the baking dish in the preheated oven and bake for 10 to 15 minutes, or until the cheese is melted and bubbly.
