Combine dried or fresh beans with a large quantity of water in a substantial pot. Add sliced onions, chopped cilantro, diced jalapeño pepper, minced garlic, and rendered lard to the pot. Ensure that all ingredients are submerged in water, leaving approximately 4-5 inches of space at the top.

Bring the mixture to a rolling boil, then gradually decrease the heat to a simmer. Allow the beans to cook for 2-3 hours, or up to 5 hours depending on their type and desired tenderness. Periodically add more water as needed to maintain the optimal level.
