  • 1 cup white sugar
  • 1 teaspoon vanilla extract
  • 2 (3 inch) pieces cinnamon sticks
  • 5 large eggs, beaten

Heat your oven to the highest temperature setting, which is 400 degrees F (200 degrees C).

Combine milk, sugar, vanilla extract, and cinnamon sticks in a small saucepan placed over the middle heat setting. Bring to a gentle simmer for 3 minutes, then switch off the heat and let it sit until lukewarm to the touch.

Add 3 tablespoons of the milk mixture to the beaten eggs and mix until they are fully incorporated.

Carefully remove cinnamon sticks from the milk mixture and dispose of them. Gradually blend the eggs into the lukewarm milk mixture until it is smooth and combined. Pour the mixture into individual ramekins and place them in a large roasting dish. Fill the roasting dish with enough water to reach halfway up the sides of the ramekins.

Bake in the preheated oven until the tops are lightly browned, taking approximately 40 minutes. Periodically check the water level to ensure it doesn't dry out, adding more water as necessary to maintain the desired consistency.
