  • 1/4 cup chopped onion
  • 1 clove garlic, minced
  • 2 (9 ounce) bags fresh spinach
  • 1/4 cup sliced kalamata olives
  • 2 tablespoons crumbled feta cheese
  • 1/2 teaspoon grated lemon rind
  • 1/2 teaspoon salt
  • 1/4 teaspoon dried oregano
  • 1/8 teaspoon white pepper
  • 1 pound tilapia fillets
  • 2 tablespoons butter, melted
  • 2 teaspoons lemon juice
  • 1 pinch paprika, or to taste

Preheat your oven to a high temperature of 400 degrees Fahrenheit (or 200 degrees Celsius, if you prefer metric).

In a large skillet, heat some olive oil over medium heat. Add sliced onions and minced garlic to the hot oil and stir constantly until they become soft and translucent, taking around 5 minutes. Next, add a handful of fresh spinach leaves to the skillet and continue stirring until they have wilted and cooked down, approximately another 5 minutes.

Meanwhile, combine the chopped olives, crumbled feta cheese, lemon zest, salt, dried oregano, and white pepper in a bowl. Stir these ingredients into the cooked spinach until they have blended together seamlessly, taking another 5 minutes.

Now, transfer this spinach mixture to a 9x13-inch baking dish. Arrange the tilapia fillets on top of the spinach mixture in a single layer.

In another small bowl, mix softened butter with freshly squeezed lemon juice until you get a smooth paste. Drizzle this mixture over the fish fillets, followed by a sprinkle of paprika for added flavor.

Finally, place the baking dish in your preheated oven and bake until the fish flesh has turned opaque and flakes easily with a fork, taking around 20 to 25 minutes.
