Ingredients

- 2 teaspoons lime juice
- 1 sprig fresh mint, chopped
- 1 sprig fresh parsley, chopped
- 1 medium red bell pepper
- 1 pound lean ground beef
- 8 ounces fresh spinach - rinsed, drained and coarsely chopped
- 6 ounces crumbled feta cheese
- 1/4 cup bread crumbs
- 1/4 cup chopped onion
- 1 large egg, beaten
- 1 clove garlic, minced
- 3 sprigs fresh mint, coarsely chopped
- 2 sprigs fresh basil, coarsely chopped
- 2 sprigs fresh parsley, coarsely chopped
- salt and ground black pepper to taste
- 4 Kaiser rolls, split and toasted
- 1 medium tomato, sliced
- 4 leaves lettuce

Combine the ingredients of the feta cheese spread by mixing them in a small bowl until well incorporated.

Prepare the burgers: Preheat your oven's broiler and position the rack about 6 inches away from the heat source. Line a baking sheet with aluminum foil to make cleanup easier.

Slice the bell pepper in half lengthwise, removing the stem, seeds, and white parts. Place the cut side of the pepper on the prepared baking sheet.

Cook under the preheated broiler until the skin has turned dark and blistered, taking about 5 minutes. Remove from the oven and transfer the pepper halves to a paper bag to cool and steam, taking about 5 minutes.
