Ingredients
- 4 large green bell peppers, tops removed, seeded
- 4 large red bell peppers, tops removed, seeded
- 1 tablespoon olive oil
- 1/2 pound ground pork
- 2 onions, chopped
- salt and pepper to taste
- 1/4 cup dry white wine
- 1 (10.75 ounce) can tomato puree
- 1 (4 ounce) package feta cheese
- 1/2 cup cooked white rice
- 1/2 cup raisins
- 1/2 cup pine nuts
- 2 tablespoons chopped fresh parsley
Instructions
1
First, preheat your oven to 350 degrees Fahrenheit (175 degrees Celsius). To begin preparing the dish, submerge green and red bell peppers in a bowl filled with sufficient warm water to cover them, allowing them to soften for 5 minutes.
2
Next, heat the olive oil in a skillet over medium heat. Add pork and onions to the skillet, seasoning with salt and pepper before cooking until the pork is evenly browned. Remove excess grease from the skillet, then add wine and tomato puree to the mixture, continuing to cook for an additional 10 minutes.
3
Then, transfer the skillet mixture to a large bowl and combine it with feta cheese, cooked rice, raisins, pine nuts, and parsley. Stuff the prepared bell peppers with this mixture, arranging them in a baking dish.
4
After that, cover the baking dish with aluminum foil and bake it for 30 minutes in the preheated oven. Remove the foil, then continue baking for an additional 10 minutes, or until the stuffing is lightly browned. This dish can be served hot or cold.
