- 2 ounces crumbled feta cheese

Begin by heating a large quantity of water in a pot until it reaches a rolling boil. Add the beans to the boiling water and cook for 10-15 minutes, or until they become tender. Remove from heat and drain the water thoroughly.

In a separate container, combine oil, vinegar, salt, and pepper. Whisk the ingredients together until they form a smooth mixture. Add chopped parsley, minced shallot, and crushed garlic to the bowl and stir until well combined.

In a large serving dish, combine the cooked beans with diced tomatoes. Pour the dressing mixture over the top of the bean and tomato mixture, stirring until everything is well incorporated.
