Mediterranean Farro Salad
Ingredients
  • 1 1/2 cups farro
  • 4 cups chicken broth
  • 1 teaspoon olive oil
  • 1 teaspoon sea salt, or to taste
  • 1/4 cup extra-virgin olive oil
  • 3 tablespoons fresh lemon juice
  • 1 tablespoon Greek seasoning
  • 1 clove garlic, minced
  • 1 cup seeded, diced tomato
  • 1 cup seeded, diced cucumber
  • 1 cup chopped red bell pepper
  • 3/4 cup thinly sliced red onion
  • 1 cup crumbled feta cheese
  • salt and ground black pepper to taste

Wash farro thoroughly under running water, then drain the excess liquid completely.

Place the farro in a large pot and pour in chicken broth, ensuring that it covers the farro by at least an inch. If necessary, add some water to achieve this level of coverage. Add a teaspoon of olive oil and a pinch of sea salt into the pot as well.

Place the pot over high heat and bring the liquid to a rolling boil. Once boiling, reduce the heat to a medium level and let it simmer, uncovered, while stirring occasionally, until the farro is tender. This should take around 35 minutes for whole grain farro or approximately 20 minutes for pearled farro.

Once the farro is cooked, drain it thoroughly and rinse it under cold running water to stop the cooking process. Set the cooled farro aside to allow it to reach room temperature, which should take around 15 minutes.

In the meantime, combine 1/4 cup of extra-virgin olive oil, freshly squeezed lemon juice, Greek seasoning, and minced garlic in a large bowl. Mix everything together until well combined.

Add the chopped tomato, cucumber, red pepper, red onion, and crumbled feta cheese to the bowl. Mix everything together until the farro is evenly coated with the dressing.

Finally, season the farro mixture with a pinch of salt and pepper to taste
