Mediterranean Couscous

  • 1 cup couscous
  • 1 cup boiling water
  • 3 tablespoons olive oil
  • 1 clove garlic, minced
  • 1/4 cup diced red bell pepper
  • 4 green onions, sliced
  • 1 cup cherry tomatoes
  • 1 cup fresh basil leaves
  • 1 pinch salt
  • 1 pinch ground black pepper
  • 1 dash balsamic vinegar
  • 1/4 cup grated Parmesan cheese

First, preheat your oven to 350 degrees Fahrenheit or 175 degrees Celsius.

Then, combine the couscous and boiling water in a large pot. Bring the mixture back to a rolling boil, cover it with a lid, and take the pot off the heat source. Allow it to sit for 5 minutes before gently separating the individual grains with a fork.

Simultaneously, heat a generous amount of oil in a large skillet over medium heat. Introduce the minced garlic, chopped green onions, and sliced peppers into the skillet and sauté for a short period of time. Next, add in the diced tomatoes, chopped basil, cooked couscous, salt, and pepper. Mix everything together thoroughly before transferring the mixture to a 1 1/2 quart casserole dish.

Finally, drizzle some balsamic vinegar over the top of the casserole before placing it in the preheated oven for 20 minutes. Once warm, sprinkle some Parmesan cheese over the dish.
