Ingredients
  • 1/4 cup extra-virgin olive oil
  • lemon, juiced
  • 2 tablespoons balsamic vinegar
  • 1 teaspoon dried tarragon
  • 1 teaspoon dried oregano
  • 1 teaspoon paprika
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 4 chicken thighs with skin
  • 1 small red onion, sliced into petals
  • 8 mini bell peppers, halved lengthwise and seeded
  • 1 pound baby potatoes, halved
  • 1 lemon, sliced
  • 1/4 cup crumbled feta cheese
  • 1/4 cup fresh parsley, chopped
  • 8 pitted kalamata olives

Preheat your oven to a high temperature of 425 degrees Fahrenheit or 220 degrees Celsius. Cover a large baking sheet with aluminum foil to prevent food residue from sticking.

To create the marinade, combine olive oil, freshly squeezed juice of one lemon, vinegar, dried tarragon leaves, oregano, ground paprika, salt, and black pepper in a large mixing container.

Add the chicken thighs, sliced onion, baby bell peppers, and diced potatoes to the marinade. Stir everything together until it's evenly coated.

Transfer the vegetable-chicken mixture to the prepared baking sheet and spread it out in an even layer. Arrange the lemon slices on top of the vegetables, leaving the chicken uncovered to allow its skin to brown.

Bake the dish in your preheated oven for approximately 40 minutes. Remove it from the oven and garnish with crumbled feta cheese, chopped parsley, and pitted olives.
