Ingredients
- 4 (4 ounce) fillets catfish
- 1 tablespoon lemon juice
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1/4 cup freshly grated Parmesan cheese
- 2 tablespoons butter, softened
- 1 1/2 tablespoons mayonnaise
- 4 roma tomatoes or sun-dried tomatoes, sliced thin

Preheat your oven to its highest temperature setting, which is usually denoted as 'broil'. Set the broiler to a high heat level of 500 degrees Fahrenheit.

Next, take a broiling pan and give it a light coating of non-stick cooking spray to prevent the fillets from sticking.

To prepare the fish, take each fillet and give it a good brush on both sides with freshly squeezed lemon juice. Then, sprinkle a pinch of salt and pepper over the top to add flavor.

Place the fillets flat side up on the prepared broiling pan, making sure they are not overlapping each other.

In a small bowl, combine grated Parmesan cheese, softened butter, and mayonnaise to create a tasty sauce.

Place the fillets about 4 inches away from the heat source and broil for 6 minutes, or until they are cooked to your liking.

Remove the pan from the oven and carefully flip the fillets over. Spread the cheese sauce evenly over each fillet, making sure to cover them completely.

Top each fillet with a few slices of fresh tomato.

Broil the fish for an additional 4 to 6 minutes, or until it flakes easily with a fork when you take a bite.
