Ingredients
- olive oil cooking spray
- 1 (16 ounce) package ziti pasta
- 1 tablespoon olive oil
- 1/2 (8 ounce) package fresh spinach, chopped
- 1 (4 ounce) package fresh mushrooms, sliced
- 1 (15 ounce) container part-skim ricotta cheese
- 1 (8 ounce) package crumbled goat cheese
- 1/2 (8 ounce) package shredded mozzarella cheese
- 1 (14 ounce) jar spaghetti sauce
Instructions
1
First, preheat your oven to a high temperature of 350 degrees Fahrenheit (or 175 degrees Celsius, if you prefer metric).
2
Next, take a 9x13-inch baking dish and give it a light coating of cooking spray to prevent food from sticking.
3
Now, fill a large pot with water and add a pinch of salt. Place the pot over high heat until the water reaches its boiling point.
4
Once boiling, cook ziti pasta in the pot for about 8 minutes, or until it's still slightly firm to the bite.
5
After draining the pasta, transfer it to a large serving bowl.
6
Then, heat some olive oil in a medium-sized skillet over high heat. Add spinach and mushrooms to the hot oil and cook until they're soft and tender, taking about 5 minutes.
7
Remove the skillet from heat and mix the cooked spinach and mushrooms with the ziti pasta in the bowl.
8
Add a generous amount of ricotta cheese, goat cheese, and half of the mozzarella cheese to the pasta mixture. Mix everything together thoroughly.
9
Next, stir in some spaghetti sauce until it's fully incorporated into the pasta mixture.
10
Transfer the pasta mixture to the prepared baking dish.
11
Finally, sprinkle the remaining mozzarella cheese over the top of the pasta mixture.
12
Bake the dish uncovered in the preheated oven for about 15 minutes, or until it's bubbly and the cheese is melted.
