Meat-Filled Ukrainian Cabbage Rolls
Ingredients
  • 1 tablespoon butter
  • 1 large onion, chopped
  • 3/4 pound ground pork
  • 1/2 cup fresh bread crumbs
  • 1 large egg
  • 2 teaspoons salt
  • 1 teaspoon freshly ground black pepper
  • 1 head savoy cabbage, cored
  • 2 cups chicken stock, or as needed
  • 1 cup sour cream
  • 1 tablespoon all-purpose flour
  • 1 tablespoon chopped fresh dill

Heat the butter in a large skillet over high heat, stirring occasionally until it reaches its melting point. Sauté the sliced onion in butter until it becomes translucent and tender, stirring occasionally to prevent burning.

Remove the skillet from heat and let the onion cool down completely before handling it. Once cooled, mix together with ground pork, bread crumbs, egg, salt, and pepper until a smooth dough forms.

Place the head of cabbage in a large pot and add enough water to cover it halfway. Bring the mixture to a boil, then reduce heat and cook for approximately 2 minutes or until the outer leaves become soft and translucent. Remove the softened leaves one at a time by gently pulling them off with your fingers.

Remove the thick ribs from the leaf stem of each cabbage leaf, taking care not to tear them.

Preheat your oven to 325 degrees Fahrenheit (165 degrees Celsius). Grease the bottom of a 9x13-inch baking dish and line it with the outer cabbage leaves.

Lay out a few more cabbage leaves on a clean work surface. Place a generous helping of the pork mixture at the base of each leaf, then roll it up towards the top. Repeat this process until all the filling is used up.

Arrange the finished cabbage rolls in a single layer over the leaves in the dish, making sure not to overlap them. Pour just enough chicken stock into the dish to cover the rolls.

Cover the dish with a lid and bake in the preheated oven for 1 hour. When done, carefully pour off any excess cooking liquid from the dish into a small saucepan.

In a separate bowl, whisk together sour cream and flour until smooth. Gradually add the sour cream mixture to the cooking liquid, stirring constantly over medium heat until heated through, about 5 minutes.

To serve, arrange the cabbage rolls on a platter and cover with the warm sauce. Sprinkle some chopped dill over the top for added flavor.
