- 1/4 cup white chocolate chips

Combine the flour, matcha powder, baking powder, and salt in a large mixing container. Create a depression or indentation in the center of this mixture; then, pour 1 cup plus 1 tablespoon of cashew milk, an egg, olive oil, and vanilla extract into the depression. Mix this batter just enough to leave a few small lumps of flour remaining. Introduce the chocolate chips into the mixture and mix again briefly.

Prepare a small saucepan by lightly coating it with oil or cooking spray; heat over medium-low temperatures. Transfer 2 to 3 spoonfuls of the batter onto the center of the pan, spreading it evenly with the back of a spoon. Cook until small bubbles start to form on the surface and then pop, taking about 1 minute. Flip the pancake over and cook until the edges are lightly golden brown, taking about 1 minute more. Repeat this process with the remaining batter.
