- 1 tablespoon prepared yellow mustard
- 1 tablespoon chopped fresh parsley
- 1 egg, beaten
- 1 pound cooked crabmeat, flaked
- 3 cups vegetable oil for frying

Combine pancake mix, mayonnaise, mustard, parsley, and egg in a medium-sized bowl until you have achieved a smooth and consistent mixture. Thoroughly incorporate the crabmeat into this blend.

Heat oil in a large skillet over a medium to high heat level. (Make sure the amount of oil is sufficient to reach halfway up the sides of the crab cakes.) When the oil reaches its optimal temperature, carefully position the crab cakes in the pan. Cook until they turn golden brown, approximately 8 minutes per side. If the patties are browning too quickly, lower the heat to prevent burning. Remove from heat and drain on paper towels before serving promptly.
