Mary's New York-Style Cheesecake
Ingredients
  • 2 1/2 cups graham cracker crumbs
  • 1/4 cup white sugar
  • 1/2 cup margarine, softened
  • 4 (8 ounce) packages cream cheese, softened
  • 1 1/2 cups white sugar
  • 1 pint heavy cream
  • 2 tablespoons all-purpose flour
  • 7 eggs
  • 2 teaspoons lemon juice
  • 2 teaspoons vanilla extract
Instructions
1
Preheat your oven to 350 degrees Fahrenheit, or 175 degrees Celsius. To begin, combine graham cracker crumbs and a quarter cup of sugar in a medium-sized bowl. Add margarine to the mixture until it's fully incorporated and has a uniform texture. Press this mixture into a 9-inch springform pan, making sure to cover the entire surface.
2
In a large mixing bowl, use an electric mixer to blend cream cheese with sugar until it reaches a smooth consistency. In a separate container, whisk together cream, flour, eggs, lemon juice, and vanilla extract. Combine these two mixtures and blend until they're fully incorporated.
3
Pour the cream cheese mixture into a 9-inch springform pan that has been prepared with the graham cracker crust. Mix everything together thoroughly.
4
Place the cake in a preheated oven and bake for 65 minutes. After completing this time, turn off the oven and let the cake cool inside it for 30 minutes. Open the door of your oven to allow air to circulate and continue cooling the cake for another 30 minutes. Remove it from the oven and let it cool completely before refrigerating it as long as possible.
