In a large, heat-resistant container, blend egg yolks with water, Marsala wine, and sugar. Position the bowl above the simmering water to create a makeshift double boiler.

Stir constantly with a balloon whisk until the sugar has fully incorporated and the mixture begins to coagulate, approximately 2 minutes.

Gradually continue cooking and whisking until the sabayon reaches a light, airy consistency similar to mousse and holds its shape. Allow for 15-20 minutes of cooking time, periodically lifting the bowl to permit steam to escape and prevent overcooking.
