Marinated Ramen Eggs
Ingredients
  • 4 large eggs
  • 3 tablespoons soy sauce
  • 2 tablespoons mirin (Japanese rice wine)
  • 1 tablespoon cooking sake
  • 1 pinch ground black pepper

To prepare the eggs, first allow them to come to a comfortable temperature by submerging them in lukewarm water for around 10 minutes.

At the same time, heat a large container of water until it reaches a gentle simmer.

Using caution, poke a small hole in the bottom of each egg with a pin. Then, carefully place the eggs into the simmering water.

Submerge the eggs in the boiling water and cook for 6 minutes and 20 seconds.

Transfer the eggs to a bowl of ice-cold water to rapidly cool them down, which should take around 2 minutes.

While the eggs are cooling, mix together soy sauce, mirin, sake, and black pepper in a separate container to create the marinade.

Once the eggs have cooled, carefully remove their shells by starting at the center and working your way around.

Place the peeled eggs directly into the marinade. Refrigerate them for at least 2 to 4 hours, or up to 2 days if you prefer a stronger flavor. Every 30 minutes, turn the eggs over or as frequently as you like.

Finally, slice the eggs in half when you're ready to use them.
