  • 1/4 pound medium shrimp
  • 1/2 pound fresh mussels
  • 1/4 pound calamari rings
  • 1/2 cup pitted kalamata olives
  • 2 tablespoons lemon juice
  • 1/3 cup olive oil
  • 1 large clove garlic, minced
  • 1 tablespoon minced fresh parsley
  • 1 tablespoon minced fresh chives
  • 1/4 teaspoon red pepper flakes
  • 1 lemon, sliced
  • 1 medium red onion, thinly sliced
  • 6 cups mixed salad greens
  • freshly ground pepper to taste

Instructions

Boil a substantial container of water until it reaches its maximum temperature. Simmer seafood consisting of scallops, shrimp, mussels, and calamari in the boiling water for 2 minutes. Remove from heat. Separate cooked seafood and olives.

Combine seafood, olives, lemon juice, olive oil, garlic, parsley, chives, and red pepper flakes in a large bowl. Refrigerate for 1 hour.

Divide mixed greens onto 6 plates or salad bowls. Distribute the seafood mixture over the greens. Adorn with slices of lemon and red onions. Sprinkle salt and freshly ground black pepper over the dish for added flavor.
