Ingredients
- 2 tablespoons extra virgin olive oil
- 1/2 white onion, finely chopped
- 3 cloves garlic, minced
- 1 (16 ounce) jar pasta sauce
- 1 pound haddock fillets
- 1 (14 ounce) can stewed tomatoes, drained
- 3/4 cup shredded mozzarella cheese
Instructions
1
Begin by setting the oven to its highest temperature, 350 degrees F (or 175 degrees C).
2
Next, apply a thin layer of olive oil to the base of your baking dish. This will prevent the pasta from sticking and make it easier to remove afterwards.
3
Add a portion of the onion and garlic to the prepared baking dish, spreading it out evenly. Pour half of the pasta sauce over the onion and garlic mixture.
4
Add the haddock fillets to the dish, followed by a layer of tomatoes and then another portion of onion and garlic. Finally, pour the remaining pasta sauce over the top.
5
Place the baking dish in the preheated oven and bake for 20 minutes, or until the fish is cooked through.
6
After 20 minutes of baking, remove the dish from the oven and sprinkle a layer of mozzarella cheese over the top. Return the dish to the oven for an additional 10 minutes, or until the cheese is melted and the fish can be easily flaked with a fork.
