Marie's Beef and Potato Pie
Ingredients
  • 4 large potatoes, peeled and cubed
  • 2 tablespoons butter, divided
  • salt and ground black pepper to taste
  • 1 pound ground beef
  • 1 packet dry French onion soup mix
  • 1 cube chicken bouillon
  • 1 cube beef bouillon
  • 2 tablespoons water
  • 1 (11 ounce) can whole kernel corn, drained
  • 1 (10 ounce) can diced carrots, drained
  • 1 (10 ounce) can peas, drained
  • 2 tablespoons paprika
  • 1 cup shredded Cheddar cheese
Instructions
1
Firstly, preheat your oven to the optimal temperature of 375 degrees Fahrenheit or 190 degrees Celsius.
2
Next, place the potatoes in a substantial pot and submerge them in salted water; bring the mixture to a rolling boil. Once boiling, reduce the heat to a moderate-low setting and let it simmer until the potatoes are tender, which should take around 15 minutes. Remove the potatoes from the water and transfer them to a large bowl.
3
Then, use a potato masher or fork to mash the potatoes with 1 tablespoon of butter until they reach your desired consistency. Add a pinch of salt and pepper to enhance the flavor.
4
In a separate pan, melt 1 tablespoon of butter over medium heat. Add the ground beef to the hot skillet and cook, stirring occasionally, until it's browned and crumbly, taking around 5 to 7 minutes. Remove any excess grease from the pan.
5
Mix the onion soup mix, chicken bouillon, and beef bouillon together with the ground beef in the skillet. Let it simmer for about 2 minutes, allowing the flavors to meld together. If the mixture seems too dry, add a little water to balance it out.
6
Now, spread the ground beef mixture evenly across the bottom of a 2-quart casserole dish. Add a layer of corn, carrots, and peas on top.
7
Next, spoon the mashed potato mixture over the vegetable layer. Sprinkle a pinch of paprika to add some color and flavor.
8
Finally, bake the dish in the preheated oven for 20 minutes. Sprinkle some Cheddar cheese over the mashed potato layer, and continue baking until the cheese is melted and bubbly, taking an additional 10 minutes.
