Maria's Spicy Mexican Rice
Ingredients
  • 2 tablespoons olive oil
  • 1 cup rice
  • 1/2 large onion, diced
  • 1/2 tablespoon salt
  • 1/8 teaspoon ground cumin
  • 1/8 teaspoon ground black pepper
  • 2 1/2 cups water
  • 1/3 cup tomato sauce
  • 1 tablespoon chicken bouillon (such as KnorrĀ®)
  • 1 whole serrano chile pepper

Preheat a saucepan over an average heat setting, typically medium heat.

Melt oil in the saucepan and combine cooked rice and sliced onion, stirring constantly until they turn a golden brown color, approximately 5 minutes long; add a pinch of salt, a sprinkle of ground cumin, and a few grinds of black pepper for flavor.

Add water to the saucepan, mixing it well with the rice and onion mixture. Stir in a can of tomato sauce and a packet of chicken bouillon cubes to enhance the flavor.

Increase the heat level in the saucepan to a higher setting, place a lid on top, and bring the mixture to a rolling boil.

Add a diced serrano pepper to the saucepan and continue cooking at a high heat for 10 minutes, allowing the flavors to meld together.

Once the rice has become tender and most of the water has been absorbed, lower the heat to a low setting and let it simmer for an additional 15-20 minutes, or until the rice is cooked to perfection.
