Heat canola oil in a large Dutch oven over medium heat, and sear the chicken drumsticks and thighs until they develop a golden-brown crust, approximately 5 minutes on each side. Set the chicken aside for further preparation.

Introduce the onion and garlic to the still-warm skillet, stirring constantly until they reach a deep brown color, roughly 8 minutes.

Add apple cider vinegar, soy sauce, and water to the skillet, stirring in bay leaves, peppercorns, and a cinnamon stick. Bring this mixture to a boil over medium heat, dislodging any browned residue that has accumulated at the bottom of the pan.

Return the chicken pieces and any accumulated juices to the skillet, then cover it with a lid.
