- 2 tablespoons lime juice
- 1 tablespoon garlic powder
- 1 tablespoon vegetable oil
- 2 skinless, boneless chicken breast halves - cut into bite-size pieces
- 8 (10 inch) flour tortillas
- 1 cup shredded Cheddar cheese
- 1 cup shredded Monterey Jack cheese

Preheat your oven to 350 degrees Fahrenheit (or 175 degrees Celsius).

Take the margarita mix, lemon juice, lime juice, and garlic powder, and combine them in a large mixing container. Stir well until everything is fully incorporated.

Heat the vegetable oil in a large skillet over medium heat. Once hot, add the chicken and cook it until it reaches an internal temperature of 165 degrees Fahrenheit (or 74 degrees Celsius), and the juices run clear. This should take around 5 to 7 minutes.

After cooking the chicken, remove excess oil from it. Then, pour the margarita mixture into the skillet with the chicken and let it simmer for 15 to 20 minutes, or until most of the mixture has evaporated.

Take the cooked chicken and transfer it to a paper towel-lined plate to drain any remaining moisture.

Now, layer 4 tortillas with the chicken, Cheddar cheese, and Monterey Jack cheese. Top it off with the remaining 4 tortillas to create a quesadilla.

Place 1 or 2 of these quesadillas on a large baking sheet at a time. This will help with even cooking.

Bake the quesadillas in the preheated oven until the cheese is melted and bubbly. This should take around 15 minutes.
