Ingredients
- 2 cups pastry flour
- 1 1/2 cups white sugar
- 1 tablespoon baking powder
- 1 teaspoon salt
- 3/4 cup lukewarm water
- 1/2 cup vegetable oil
- 5 egg yolks
- 1 teaspoon vanilla extract
- 1/2 teaspoon maple-flavored extract
- 1/2 cup finely chopped walnuts
- 1 cup egg whites
- 1/2 teaspoon cream of tartar
- 1 (3.4 ounce) package instant butterscotch pudding mix
- 1 cup milk
- 2 cups whipped cream
Instructions
1
Preheat your oven to 325 degrees Fahrenheit (165 degrees Celsius).
2
Sift together flour, sugar, baking powder, and salt in a large mixing bowl. Combine these dry ingredients.
3
Make a depression in the center of the dry ingredients mixture; place water, oil, egg yolks, vanilla extract, and maple extract into this depression. Mix the ingredients together using a wooden spoon until they form a smooth batter; then, continue beating until the mixture is fully incorporated and free of lumps.
4
In a separate large bowl, whip egg whites until stiff peaks form. Hold the beater or whisk vertically and observe: the egg whites will rise to sharp peaks.
5
Using a rubber spatula or wire whisk, gently fold 1/4 of the beaten egg whites into the batter. Move the spatula in a circular motion, starting from the center of the bowl and working your way around its edges. Repeat this process until the egg whites are fully incorporated.
6
Fold in the remaining 3/4 of the beaten egg whites, stirring just until they are fully incorporated. Pour the batter into an ungreased 9- or 10-inch tube pan.
7
Cut a knife through the batter to eliminate any large air bubbles. Now, bake the cake in the preheated oven until it is golden brown and a toothpick inserted into its center comes out clean, approximately 1 hour.
8
Once the cake is baked, remove it from the pan by tipping it upside down over a wire rack. Allow the cake to cool for about 30 minutes.
9
Run a knife around the edge of the pan to release the cake; then, let it cool completely for another 30 minutes.
10
Mix instant pudding and milk together in a bowl until smooth. Fold in whipped cream to create a creamy mixture.
11
Spread this pudding mixture over the cooled cake.
