  • 2 cups real maple syrup
  • 15 wooden pop sticks

Gather a large, clean container and fill it with fresh snow. Level the surface to create an even base, then place it in the freezer.

Combine pure maple syrup with a large cooking vessel and bring to a rolling boil. Stir constantly with a wooden spoon over low-medium heat until the syrup forms a solid ball when dropped into chilled water. A temperature probe inserted into the syrup should register between 235 and 245 degrees Fahrenheit (112 to 118 degrees Celsius).

Retrieve the snow from the freezer and position it on a flat surface. Drizzle approximately 2 tablespoons of syrup per piece over the snow in thin, 5-inch-long strips. Allow these syrup strips to cool and harden for 3 to 5 seconds before carefully extracting them from the snow. Wind these candy strips into a lollipop shape around the end of a wooden stick, and enjoy while still slightly warm.
