Ingredients
- 1 1/2 tablespoons brown sugar
- 1 1/2 teaspoons sea salt
- 1/2 teaspoon garlic powder
- 1/2 teaspoon onion powder
- 1/2 teaspoon paprika
- 1/4 teaspoon freshly ground black pepper
- 1/4 teaspoon dry mustard
- 1/4 teaspoon crushed fennel seeds
- 6 boneless pork loin chops, 1/2 inch thick
- 1/4 cup pure maple syrup, preferably dark amber (Grade B)
- 2 tablespoons spicy brown mustard
- 1 pinch garlic powder
- 1 pinch paprika
- 1 pinch freshly ground black pepper
- 1 pinch cayenne pepper
- 1/2 cup seasoned bread crumbs
- 1 tablespoon olive oil
- 1 tablespoon canola oil
- 1 clove clove garlic, crushed

Combine the brown sugar, sea salt, garlic powder, onion powder, paprika, black pepper, dry mustard, and fennel seeds in a small bowl, whisking them together until well combined.

Dry the pork loin chops thoroughly with a paper towel and then use a sharp knife to create shallow cuts on both sides of the meat, making sure they are about 1/8 inch deep and spaced evenly apart.

Rub the spice mixture all over the pork chops, making sure to also fill in the scored lines. Cover the chops and refrigerate for 4-6 hours.

In a separate small bowl, whisk together the maple syrup, brown mustard, garlic powder, paprika, black pepper, and cayenne pepper until smooth.

Dip each pork chop in the seasoned bread crumbs on all sides, making sure they are evenly coated.

Heat a generous amount of olive oil and canola oil in a large skillet over medium-high heat. Add the minced garlic to the pan and cook until it is lightly browned and fragrant, about 1 minute. Remove the garlic from the pan and discard it.

Add the pork chops to the skillet in batches, being careful not to overcrowd the pan. Cook the chops until they are lightly browned on both sides, about 2-3 minutes per side.

Return all of the pork chops to the skillet and reduce the heat to medium. Drizzle half of the maple syrup mixture over the pork chops, then turn them and cook until they are glazed, about 1-2 minutes.

Drizzle the remaining maple syrup mixture over the pork chops and turn them again, cooking until they are glazed, about 1-2 minutes.

Reduce the heat to low and cover the pork chops with a lid. Cook until they are slightly pink in the center, about 5 minutes. Use an instant-read thermometer to check that the internal temperature has reached at least 145 degrees F (63 degrees C).
