Ingredients
- 1 1/2 cups white sugar
- 1 cup butter, softened
- 3 large eggs, at room temperature
- 1/2 cup sour cream, at room temperature
- 2 teaspoons vanilla extract
- 2 1/2 cups all-purpose flour
- 2 teaspoons baking powder
- 1 teaspoon baking soda
- 1 pinch salt
- 1 cup milk, at room temperature
- 1 (8 ounce) package cream cheese, softened
- 1/2 cup white sugar
- 1 teaspoon vanilla extract
- 2 cups heavy whipping cream
- 2 cups sliced fresh strawberries
Instructions
1
Preheat your oven to 350 degrees Fahrenheit (175 degrees Celsius).
2
To prepare the baking pan, grease it thoroughly with butter or cooking spray and dust it evenly with flour, making sure the 1-inch high sides are secure.
3
Combine sugar and butter in a large mixing bowl using an electric mixer on medium speed until they become light, fluffy, and well combined.
4
Add eggs one at a time to the butter mixture in the bowl, beating each egg thoroughly before adding the next.
5
In a separate bowl, whisk together flour, baking powder, baking soda, and salt until they are well combined.
6
Gradually add the flour mixture to the butter mixture in the bowl, alternating with milk just until everything is well combined.
7
Stop the mixer and scrape down the sides of the bowl before finishing the mixing process with a rubber spatula.
8
Pour the cake batter into the prepared baking pan and spread it evenly to the corners of the pan.
9
Bake the cake in a preheated oven for about 20 minutes, or until a toothpick inserted into the center of the cake comes out clean.
10
Allow the cake to cool completely, which should take around 30 minutes.
11
To remove the cake from the pan, insert a paring knife between the cake and the pan and gently pry them apart.
12
Cover the cake with a plate or cooling rack, invert it onto the plate, and you're done.
13
To make the frosting, combine cream cheese, sugar, and vanilla in a bowl using an electric mixer on medium speed until they become fluffy.
14
Slowly pour in the cream and reduce the mixer speed to low once everything is well combined.
15
Increase the mixer speed to medium-high and beat until stiff peaks form, about 2 minutes.
16
Spread the frosting evenly over the top and sides of the cake, smoothing out any imperfections.
17
To decorate the cake, place 2 to 3 rows of overlapping strawberry slices parallel to the short sides of the cake for the two red stripes of the Canadian flag.
18
Use a toothpick to draw out a maple leaf shape in the center of the cake, and then use points of strawberry slices to create the leaf's points.
19
Cut a strip of strawberry for the leaf stem and fill in the area of the maple leaf with sliced strawberries.
20
Refrigerate the cake until you're ready to serve it.
