- salt and pepper to taste
- all-purpose flour for dredging
- 1 tablespoon canola oil
- 3/4 cup maple syrup
- 3/4 cup ketchup
- 1/3 cup water
- 1 tablespoon minced garlic

Preheat your oven to 350 degrees Fahrenheit, or 175 degrees Celsius. Prepare the pork roast by sprinkling it with salt and pepper, then coat it evenly in flour; discard any excess.

Heat a generous amount of oil in a large skillet over medium-high heat until it reaches its smoke point. Add the pork roast and sear in hot oil until it's nicely browned on all sides, approximately 1 minute per side. Transfer the roast to a large sheet of aluminum foil placed on top of a baking sheet.

Combine maple syrup, ketchup, water, and garlic in a bowl. Pour three-quarters of the sauce over the pork roast, making sure it's well-coated. Fold the foil around the pork and seal it to form a tight packet.

Place the sealed roast in the preheated oven and bake until the internal temperature reaches 170 degrees Fahrenheit, or 75 degrees Celsius, roughly 2 hours.

Carefully remove the roast from the oven and open the foil packet. Turn on your broiler and broil the roast for a short time, allowing the sauce to glaze the meat. Serve the roast with the remaining sauce.
