Maple Ginger Baked Beans
Ingredients
  • 1 1/2 pounds dry great Northern beans
  • 1 large onion, cut into wedges
  • 4 ounces salt pork, diced
  • 3/4 cup real maple syrup
  • 1/4 cup molasses
  • 1/4 cup brown sugar
  • 1 teaspoon ground ginger
  • 1 teaspoon mustard powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon ground black pepper
  • 2 cups boiling water

Submerge dried beans in a substantial container filled with water overnight, then discard the liquid. Refill the container with fresh water and heat it until boiling point is reached. Allow the beans to cook for approximately 1 hour, or until they become tender.

During this time, combine the maple syrup, molasses, brown sugar, ginger, mustard powder, salt, pepper and water in a separate bowl. Set the mixture aside for later use.

Place onion wedges at the bottom of a slow cooker with a capacity of 3 quarts or larger. Position salt pork cubes on top of the onion slices. Once the beans are cooked, drain them and transfer to the slow cooker.

Pour the maple syrup mixture over the beans, ensuring they are adequately covered with liquid. If additional water is required to cover all the beans, add a small amount of hot water.

Cover the slow cooker and cook on the Low setting for 10 to 12 hours, or on High for 5 to 6 hours. If cooking the beans on High, periodically check the liquid level to avoid over-saturation.

If the beans are too moist after cooking, remove the lid for the final 30 minutes to allow excess liquid to evaporate.
