Maple-Brined Pork Roast
Ingredients
  • 1 quart cold water
  • 1/3 cup maple syrup
  • 1/4 cup salt
  • 3 cloves garlic, crushed
  • 3 tablespoons chopped fresh ginger
  • 1 tablespoon cracked black pepper
  • 2 teaspoons dried rosemary
  • 1/2 teaspoon red pepper flakes
  • 1 (2 1/2 pound) boneless pork loin roast
  • salt and freshly ground black pepper
  • 1 tablespoon vegetable oil
  • 2 tablespoons maple syrup
  • 2 tablespoons Dijon mustard
Instructions
1
Create the marinade by combining water, maple syrup, salt, minced garlic, grated ginger, ground black pepper, dried rosemary, and red pepper flakes in a large stainless steel container.
2
Begin the pork preparation by submerging the pork loin into the marinade, covering it with a lid or plastic wrap, and refrigerating for at least 8 hours or up to 10 hours if desired.
3
Release the pork from the marinade and gently pat it dry with paper towels; then sprinkle salt and black pepper all over the surface of the pork.
4
Preheat your oven to 325 degrees Fahrenheit (165 degrees Celsius).
5
Heat a generous amount of vegetable oil in an oven-safe skillet over high heat; carefully add the pork and rotate it to achieve a uniform brown color on all sides, approximately 10 minutes total.
6
Transfer the skillet with the pork to the preheated oven and roast until it reaches a deep brown color, roughly 40 minutes.
7
Combine maple syrup and Dijon mustard in a small bowl; spread the mixture evenly across the top and sides of the roast.
8
Continue cooking until the pork reaches a slightly pink center, about 15 additional minutes. Use an instant-read thermometer to verify that the internal temperature has reached at least 145 degrees Fahrenheit (63 degrees Celsius).
