Heat water and gelatin in a small saucepan over medium-high heat, stirring constantly to ensure the gelatin is fully incorporated. Allow it to dissolve, taking around 5 minutes to achieve this. Next, add the mango purée, sugar, and lemon juice to the mixture; continue whisking until all the ingredients are well combined. Remove the saucepan from the heat source and let it cool down slightly, taking roughly 5 minutes to reach this stage.

Once the mixture has cooled, whisk in the vodka until it is fully incorporated into the gelatin.

Now, pour the cooled mango gelatin mixture into twenty (2-ounce) cups and sprinkle a few drops of chamoy on top. Add a generous amount of Tajin to each cup, ensuring it is evenly distributed.
