- 7 ripe mangoes, cored and chopped
- 1 fresh peach, chopped
- 1/3 cup honey
- 15 habanero peppers, stemmed, or more to taste
- 1/4 cup yellow mustard
- 2 1/2 tablespoons salt
- 2 1/2 tablespoons paprika
- 1 1/2 tablespoons ground white pepper
- 1 tablespoon ground cumin
- 1/3 teaspoon ground allspice
- 1/4 cup light brown sugar
- 1 1/2 cups white vinegar
- 1/2 cup apple cider vinegar

Preheat a skillet over medium heat and warm olive oil within it. Introduce the onion into the skillet; stir constantly until it becomes transparent, approximately 5 minutes.

Combine the cooked onion with diced mangoes, sliced peaches, honey, chopped habanero peppers, and ground mustard in a food processor. Process until the mixture is smooth; incorporate salt, paprika, white pepper, cumin, and allspice into the mixture. Add brown sugar; continue processing until everything is well combined.

Transfer the mango-habanero mixture to a large saucepan. Bring it to a rolling boil. Introduce white vinegar and apple cider vinegar into the mixture; stir continuously until it is thoroughly incorporated. Continue boiling the mixture until it thickens, taking around 10 to 12 minutes. Pour the sauce into jars or containers.
