Mango Cilantro Tofu Tacos

  • 3 tablespoons coconut oil, or more as needed
  • 1 onion, chopped
  • 1 serrano chile pepper, chopped
  • 2 cloves garlic, finely chopped
  • 2 (14 ounce) packages tofu, cut into chunks
  • 1 bunch fresh cilantro, finely chopped (stems and leaves separated)
  • 1/4 (1 ounce) package taco seasoning mix, or more to taste
  • 1 teaspoon ground cumin
  • 1 teaspoon ground coriander
  • 2 mangos, peeled and cut into small chunks
  • 1/4 (1 ounce) package taco seasoning mix
  • 1 pinch chili powder, or to taste

Preheat a skillet over medium heat and pour coconut oil onto the bottom of it. Allow the oil to warm up completely before adding the next ingredients.

Next, add sliced onions, diced serrano peppers, and minced garlic to the skillet; stir constantly until they turn a light golden brown color, approximately 10 minutes have passed.

Now, add the tofu to the skillet and stir it gently so that it's evenly coated with the oil and vegetables.

Combine chopped cilantro stems, 1/4 of the taco seasoning packet, 1 teaspoon ground cumin, and 1 teaspoon ground coriander into the tofu mixture; stir well until the flavors are well combined and the tofu is cooked through, taking around 5 minutes.

Add diced mangos to the skillet and sprinkle with 1/4 of the taco seasoning packet; cook for about 3 to 5 minutes, waiting until the desired consistency is reached before stirring.

Sprinkle a pinch of chili powder and salt over the mixture; stir it gently so that everything is well coated.

If desired, add a bit more cumin and coriander to the mixture for extra flavor.

Continue to simmer the tofu-mango mixture over low heat until most of the liquid has evaporated, approximately 10 more minutes have passed.

Just before serving, stir in the chopped cilantro leaves for a burst of fresh flavor.
