  • 1 teaspoon kosher salt
  • 1 teaspoon chipotle chile powder
  • 1/4 cup balsamic vinegar
  • 2 cups water
  • 2 teaspoons honey
  • 1 (1.5 fluid ounce) jigger bourbon whiskey
  • 2 (12 ounce) bottles barbeque sauce

Begin by carefully removing the skin and seeds from the mangos, placing them in a slow cooker for later use. Chop the remaining mango pieces into smaller portions and set aside momentarily.

Place a pork shoulder into the slow cooker, sprinkling it generously with black pepper, salt, and 1 teaspoon of a spicy powder made from dried chipotle peppers. Pour in balsamic vinegar and water, making sure the ingredients are well combined.

Cover the slow cooker and cook on Low for an extended period of time, typically between 5 to 8 hours, until the meat becomes extremely tender.

Once the pork is cooked to perfection, remove it from the slow cooker and discard the cooking liquid along with the mango pits. Use two forks to shred the pork into bite-sized pieces.

While the pork is cooking, blend the chopped mango in a blender until it reaches a smooth consistency. Transfer the blended mango to a saucepan along with honey, the remaining chipotle powder, and whiskey. Bring the mixture to a gentle boil.

Reduce the heat of the saucepan to medium-low and simmer, stirring constantly, until the mango has thickened and darkened slightly, approximately 10 minutes. Stir in barbecue sauce to enhance the flavor.

Return the shredded pork to the slow cooker and stir in the mango barbecue sauce. Cover the slow cooker once again and cook on High for 1 to 2 hours, allowing the pork to absorb the flavors of the sauce.
