Heat a large skillet over medium-high heat and cook the bacon, stirring occasionally, until it reaches an even golden brown color, approximately 10 minutes. Transfer the cooked bacon to a plate and set it aside.

Preheat your oven to 425 degrees Fahrenheit (220 degrees Celsius). Grease the bottom and sides of a 9x13-inch baking dish to prevent food from sticking.

Arrange the potatoes, bell peppers, onion, and jalapeño in a layer at the bottom of the prepared baking dish. Sprinkle 1/2 cup of shredded Cheddar cheese over the top layer. Scatter the cooked bacon pieces evenly over the cheese.

In a separate bowl, whisk together eggs, milk, garlic powder, black pepper, salt, and paprika until well combined. Pour the egg mixture over the layers in the baking dish.

Bake the casserole in the preheated oven until it is set, approximately 35 minutes. Remove the dish from the oven and sprinkle the remaining 1/2 cup of shredded Cheddar cheese over the top. Continue baking until the cheese is melted and golden brown, about 10 more minutes.
