- 1 tablespoon vegetable oil
- 1 onion, minced
- 1 clove garlic, minced
- 1 1/2 cups chicken broth
- 1 tomato, seeded and diced
- 1/2 teaspoon ground cumin
- 1/2 teaspoon Spanish saffron
- salt and ground black pepper to taste
- 1/4 cup frozen peas and carrots, thawed
- 1 sprig fresh cilantro

Heat a skillet over medium heat and combine rice and oil, stirring constantly until the mixture is lightly browned, approximately 2 minutes. Add diced onion and cook for another 2 minutes, stirring occasionally. Next, add minced garlic and continue to cook until the aroma is released, roughly 1 minute.

Now, pour in chicken broth and bring the mixture to a rolling boil; simultaneously add diced tomato, cumin, saffron, salt, and black pepper to the broth and bring it back to a boil. Cover the skillet, lower the heat to a low setting, and let it simmer until the rice is tender, about 20 minutes.

Finally, stir in frozen peas and carrots into the cooked rice; finish by garnishing with chopped cilantro.
