Maltese Baked Rice (Ross Fil-Forn)

  • 2 cups long grain white rice
  • 1 tablespoon olive oil
  • 1/2 pound lean ground beef
  • 1 1/2 cups canned crushed tomatoes
  • 1 1/4 cups chicken stock
  • 3 bay leaves
  • salt and black pepper to taste
  • 3 tablespoons chopped fresh basil leaves
  • 1 tablespoon chopped fresh mint leaves
  • 3 eggs
  • 1 cup shredded mozzarella cheese
  • 1/2 cup freshly grated Parmesan cheese

Begin by warming the olive oil in a cooking vessel over a moderate heat setting. Introduce the ground beef into the skillet, stirring constantly to break it down until it reaches a uniform brown color. Combine the crushed tomatoes, chicken broth, and bay leaves into the skillet, stirring well to incorporate.

Simultaneously, prepare the rice by submerging it in a saucepan with an adequate amount of water that covers the rice by about one inch. Bring the mixture to a boil, and cook for approximately 10 minutes, or halfway through the cooking time. Remove excess water from the saucepan.

Preheat your oven to 400 degrees Fahrenheit (200 degrees Celsius).

Next, remove the bay leaves from the sauce and blend in the partially cooked rice. Add basil, mint, eggs, and mozzarella cheese to the mixture; season with salt and pepper. Transfer the rice mixture to a greased baking dish, taking care not to spill any of the ingredients.

Sprinkle Parmesan cheese over the top of the rice mixture in the baking dish.

Finally, bake the rice mixture in the preheated oven for 40 minutes, or until it reaches a tender consistency and all liquid has been absorbed.
