  • 1 pint ricotta cheese
  • 2 large eggs
  • 1 (10 ounce) package frozen chopped spinach, thawed and drained
  • 1 cup shredded mozzarella cheese
  • 1/2 cup grated Parmesan cheese, divided
  • 1 1/2 tablespoons white sugar
  • 1/8 teaspoon salt
  • 1/4 teaspoon ground black pepper
  • 12 manicotti shells
  • 1 (32 ounce) jar spaghetti sauce

Combine ricotta cheese and eggs in a medium-sized bowl, blending them until smooth. Add spinach, mozzarella cheese, 1/4 cup of Parmesan cheese, sugar, salt, and pepper to the bowl, stirring until well incorporated. Fill pasta shells with the mixture.

Place 1/2 cup of spaghetti sauce in a medium-sized baking dish, spreading it evenly to cover the bottom. Arrange the stuffed pasta shells in a single layer over the sauce, leaving no gaps. Pour the remaining spaghetti sauce over the pasta shells. Cover and refrigerate for 8 hours or overnight.

When you're ready to bake, preheat your oven to 400 degrees Fahrenheit (200 degrees Celsius). Remove the shells from the refrigerator and place them in the oven.

Bake the shells, covered, for 40 minutes. Remove the lid and sprinkle the remaining Parmesan cheese over the top of the shells. Continue baking for an additional 15 minutes, allowing the cheese to melt and bubble.
