Ingredients
- 9 potatoes, peeled and cubed
- 1 cup sour cream
- 6 ounces cream cheese
- 2 tablespoons butter
- 2 teaspoons onion powder
- 1 teaspoon salt
- 1/4 teaspoon ground black pepper
Instructions
1
Begin by filling a large container with salted water and placing it on high heat, causing the water to reach its boiling point. Next, add the potatoes and cook until they have reached a tender yet still slightly firm state, which should take around 15 minutes. Remove the potatoes from the water and transfer them to a large serving dish.
2
Mash the cooked potatoes in a bowl until they have reached a smooth consistency. Then, add sour cream, cream cheese, butter, onion powder, salt, and pepper to the potatoes. Mix everything together until well combined. Cover the bowl with a lid or plastic wrap and refrigerate for at least 8 hours, or overnight.
3
Before baking the potatoes, preheat your oven to 350 degrees Fahrenheit (175 degrees Celsius). Lightly grease a medium-sized baking dish with butter or cooking spray to prevent the potatoes from sticking. Once the dish is prepared, transfer the chilled potato mixture into it.
4
Then, place the baking dish in the preheated oven and bake for about 30 minutes, or until the potatoes are golden brown and heated through. This should result in a deliciously creamy side dish.
