- 1 tablespoon lime juice
- 1 teaspoon minced fresh ginger root
- 1/4 teaspoon ground cumin
- 1 dash cayenne pepper
- 1 large mango - peeled, seeded and diced
- 1 cup diced fresh pineapple
- 1 avocado - peeled, pitted and diced
- 1 jalapeno pepper, minced
- 6 (6 inch) flour tortillas, warmed
- 1 cup chopped fresh cilantro

Preheat the skillet over high heat, allowing the olive oil to warm up. Prepare the mahi-mahi by sprinkling it with salt and pepper, ensuring an even seasoning.

Cook the fillets in the hot oil for approximately 6 minutes, or until they achieve a golden brown color on both sides and the center is opaque to the touch.

In a separate bowl, mix together the sour cream, lime juice, grated ginger, ground cumin, cayenne pepper, salt and pepper to taste; set aside for later use.

Combine the diced mango, pineapple chunks, sliced avocado, and chopped jalapeno in a separate bowl.

To assemble the dish, place a cooked mahi-mahi fillet at the center of a warmed tortilla.
