Mahi Mahi Fish Tacos
Ingredients
  • 1 teaspoon adobo seasoning
  • 4 (3 ounce) fillets mahi mahi
  • 1 dash lime juice
  • 1 medium tomato, diced
  • 1/2 red onion, chopped
  • 1 cup chopped fresh cilantro
  • 2 scallions, thinly sliced
  • 2 tablespoons lime juice
  • cooking spray
  • 8 (6 inch) corn tortillas
  • 1 avocado, sliced

Prepare the mahi mahi by sprinkling a small amount of adobo seasoning over it and adding a hint of lime juice.

For the pico de gallo, combine diced tomatoes, thinly sliced red onion, chopped cilantro, scallions, and a generous amount of lime juice in a bowl. Set it aside momentarily.

Lightly mist a nonstick skillet with cooking spray and heat it on medium-high heat, allowing the fish to develop a golden hue, approximately 2 minutes per side. Gradually decrease the heat to low and cook, covered, until the fish can be easily flaked with a fork, roughly 10 minutes.

Warm corn tortillas by placing them between damp paper towels and microwaving for a short period, typically 30 seconds to 1 minute.

Divide each mahi mahi fillet into two portions and place one portion on a tortilla. Add 2 slices of avocado and a generous helping of pico de gallo on top.
