- 2 ounces macadamia nuts
- 4 ounces plain bread crumbs
- 6 (6 ounce) mahi mahi fillets
- 4 ounces butter
- 2 ounces shallots, diced
- 4 cups chicken stock
- 4 ounces pineapple, rough chopped
- 4 ounces papaya, rough chopped
- 4 ounces mango, rough chopped
- 1 tablespoon shredded coconut
- 2 habanero peppers, seeded
- salt and pepper to taste
- white sugar to taste

Preheat your oven to a temperature of 375 degrees Fahrenheit (or 190 degrees Celsius, if you prefer metric).

In a food processor or blender, blend macadamia nuts and breadcrumbs together until they are finely ground. Then, spread the nut mixture onto a plate and coat both sides of your fish fillets with it.

In a large skillet, melt butter over medium heat. Fry the fish fillets on both sides until they turn golden brown. Transfer them to a baking dish.

In the same skillet, sauté shallots until they become translucent. Then, add chicken stock to the skillet and stir in pineapple, papaya, mango, coconut, and habanero peppers. Season with salt, pepper, and sugar to taste. Let the mixture simmer for about 30 minutes or until it reaches your desired consistency.

Strain the sauce to remove any solids, such as peppers, fruit, and shallots. Continue to warm up the sauce in a pan over low heat.

Place your fish fillets in the preheated oven for about 10 minutes, or until they reach an internal temperature of 140 degrees Fahrenheit. Remove the fish from the oven and lightly coat it with the warm sauce.
