Ingredients
- 1/2 (16 ounce) package fusilli (spiral) pasta
- 1/4 cup margarine
- 1 tablespoon minced onion
- 1/4 cup all-purpose flour
- 2 cups milk
- 4 ounces processed cheese food
- 1/4 cup blue cheese crumbles
- 1/4 cup cubed Cheddar cheese
- 1 teaspoon salt
- 1 pinch ground black pepper
- 1/4 teaspoon dry mustard

Begin by filling a large container with salted water and placing it on the stovetop over high heat. As the water reaches a vigorous boil, add fusilli pasta and return it to a rolling boil. Continue cooking the pasta, uncovered and occasionally stirring, until it reaches an al dente texture, taking around 12 minutes. Remove the pasta from the water with a colander and drain it thoroughly.

Next, preheat your oven to 400 degrees Fahrenheit (200 degrees Celsius). Lightly coat a casserole dish with butter or cooking spray to prevent the pasta from sticking.

Melt margarine in a medium-sized saucepan over medium heat. Add diced onion and cook until it becomes translucent, approximately 5 minutes. Whisk in flour to create a roux and cook for an additional minute. Gradually whisk in milk until the mixture is fully incorporated.

Add a blend of cheese food, blue cheese, Cheddar, salt, pepper, and mustard to the saucepan. Continue cooking and stirring constantly until all the cheese has melted and the mixture is thickened.

Fold in the cooked fusilli pasta until it's evenly coated with the cheese mixture. Then, pour this mixture into the prepared casserole dish.

Bake the pasta in the preheated oven for about 20 minutes, or until the top begins to brown.
