Lychee Fried Rice
Ingredients
  • 1 cup uncooked jasmine rice
  • 1/2 cup water
  • 3 tablespoons vegetable oil
  • 2 cloves garlic, minced
  • 2 tablespoons chopped carrot
  • 1 tablespoon chopped onion
  • 3 tablespoons soy-based liquid seasoning (such as Maggi®)
  • 1/4 cup reduced-sodium soy sauce
  • 2 tablespoons chopped green onion
  • 1 tablespoon chopped cashews
  • 1 teaspoon raisins
  • 1/4 teaspoon white sugar
  • 1/4 teaspoon white pepper
  • 5 canned lychees, drained and quartered

Firstly, combine the rice and water in a saucepan and place it on the stovetop over high heat. Bring the mixture to a rolling boil, then decrease the intensity of the heat to medium-low and cover the saucepan. Allow it to cook gently for 20-25 minutes, or until the rice is fully tender and has absorbed all the liquid.

Once cooked, transfer the rice to a shallow dish and refrigerate it until chilled, or use 1 1/2 cups of pre-cooked leftover rice.

Next, heat a generous amount of oil in a wok or large skillet over medium-high heat. Introduce the minced garlic into the hot oil and cook for a few seconds, allowing its fragrance to release. Then, add the sliced carrots and chopped onion, and continue cooking until the onion begins to soften.

Add the cooked rice to the wok or skillet, and cook and stir until it's hot throughout. Pour in a savory mixture of soy sauce, soy seasoning, chopped green onions, cashews, raisins, salt, and white pepper. Continue cooking and stirring until the rice is hot and well combined with the sauce.

Finally, stir in the quartered lychees to serve.
