Ingredients
- cooking spray
- 1 1/2 large zucchinis, thinly sliced lengthwise
- 1 tablespoon olive oil
- 1 pound ground beef
- 1 1/2 cups low-carb marinara sauce
- 2 teaspoons salt, divided
- 1 teaspoon dried oregano
- 1/2 teaspoon ground black pepper
- 1 (8 ounce) container ricotta cheese
- 1 large egg
- 1/2 teaspoon ground nutmeg
- 2 cups shredded mozzarella cheese
- 1/4 cup grated Parmesan cheese
- aluminum foil
Instructions
1
Preheat your oven to the desired temperature of 375 degrees Fahrenheit or 190 degrees Celsius.
2
Next, take a moment to prepare your baking dish by spraying it with cooking spray in order to prevent any food residue from sticking.
3
Now, let's focus on the zucchini slices. Gently pat them dry using a paper towel to remove any excess moisture, making it easier for the dish to cook evenly.
4
In a separate saucepan, heat some olive oil over medium-high heat before adding the ground beef. Allow it to cook until it reaches a browned state, which should take anywhere from 5 to 8 minutes.
5
Once the beef is cooked, it's time to add in the marinara sauce, along with a pinch of salt, oregano, and pepper. Let it simmer for about 10 minutes before setting it aside to be used later.
6
In a separate bowl, combine the ricotta cheese with an egg, 1 teaspoon of salt, and a pinch of nutmeg. Mix everything together until it's smooth and well combined.
7
Now, let's start building our dish by adding a layer of zucchini slices to the prepared baking dish. Cover this layer with half of the marinara sauce, followed by another layer of zucchini slices.
8
Next, spread the ricotta mixture evenly over the top of the second layer of zucchini slices. Sprinkle half of the mozzarella cheese over this mixture, and then add another layer of zucchini slices.
9
Cover the top half of the dish with the remaining marinara sauce, followed by a layer of mozzarella cheese and a sprinkle of Parmesan cheese.
10
Finally, cover the entire dish with aluminum foil before placing it in the preheated oven for 30 minutes.
11
After 30 minutes, remove the foil and continue baking until the top of the dish is golden brown, which should take an additional 15 minutes.
