Ingredients
- 1/4 cup butter
- 1 cup finely chopped celery
- 1/2 cup chopped green onion
- 1/2 cup chopped red bell pepper
- 2 pints half-and-half
- 1 teaspoon dried parsley
- salt and ground black pepper to taste
- 1 (12 ounce) can oysters
- 2 dashes Louisiana-style hot sauce
Instructions
1
Heat a large saucepan over medium heat, allowing the butter to melt and start bubbling vigorously.
2
Combine the celery, onion, and red bell pepper in the saucepan with the melted butter, stirring constantly until they become tender and soft after about 10 minutes of cooking.
3
Add the half-and-half and parsley to the saucepan with the vegetables, seasoning with salt and black pepper to taste.
4
Continue cooking until the mixture starts to simmer and boil; then, add the oysters and any liquid from their can along with a dash of Louisiana-style hot sauce to the stew.
5
Bring the mixture to a gentle simmer and cook until the oysters begin to curl into their shells, taking around 10-15 minutes more.
6
Remove the saucepan from the heat source and let it rest for 5 minutes before serving the stew.
