  • 1 (3 pound) whole chicken, cut into 6 pieces
  • 2 eggs, beaten
  • 1 (12 fluid ounce) can evaporated milk
  • 2 teaspoons salt
  • 2 teaspoons ground black pepper
  • 2 teaspoons garlic powder
  • 2 teaspoons onion powder
  • 2 1/2 cups all-purpose flour
  • 1 1/2 cups vegetable oil for frying

Combine eggs and milk in a medium-sized bowl, whisking them together until well incorporated.

Add almost all of the salt, pepper, garlic powder, and onion powder to the bowl, reserving a small amount for later use.

Set aside the egg mixture and seasonings.

Sprinkle a small pinch of the remaining salt, pepper, garlic powder, and onion powder onto both sides of the chicken pieces.

Heat oil in a large skillet over medium heat. Place flour in a plastic bag, one piece of chicken at a time.

Dip each piece of chicken into the egg mixture, coating it evenly, then add to the plastic bag. Shake the bag gently to ensure an even covering of flour on each piece.

To check if the oil is hot enough, sprinkle a small amount of flour into the skillet. If it sizzles and fries, the oil is ready.

Carefully place the chicken pieces in the skillet.

After about 5 minutes, flip the chicken over and let it cook for an additional 15 minutes or until the meat is cooked through and the juices run clear.
